<strong>Grand Final of the 8th Croquette Competition of Zaragoza and province <\/strong>yesterday at the hotel complex <strong>Aura<\/strong>, a <strong>jury <\/strong>made up of 16 professionals including sponsors, collaborators, representatives of sector associations and gastronomic communicators.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">These were: <strong>Angel Campo, <\/strong>from Amber; <strong>Fernando Cura,<\/strong> from Aragonese Wineries; <strong>Guillermo Navas<\/strong>, from Aldel\u00eds; <strong>Mar\u00eda Jos\u00e9 Forga<\/strong>, from Aragon Foods; <strong>Juan Miranda<\/strong>, from Makro Zaragoza; <strong>Miguel \u00c1ngel Lac\u00e1mara<\/strong>, from the Sierra del Moncayo PDO Olive Oil; <strong>Alejandro Ortega;<\/strong> from Enjoy Zaragoza; <strong>Jos\u00e9 Mar\u00eda Marteles<\/strong>, from the Association of Cafes and Bars; <strong>Pepe Puyuelo<\/strong>, from the Association of Sommeliers of Aragon;\u00a0 <strong>Miguel \u00c1ngel Almod\u00f3var<\/strong>, gastronomic popularizer; <strong>Rafael Garc\u00eda<\/strong>, manager of the La Olivera de Magall\u00f3n olive mill; <strong>Mar\u00eda Luisa del Amo<\/strong>, a journalist specializing in gastronomy; <strong>Manuela Delgado<\/strong>, creator of the project \u201cThe curious case of the croquette bias\u201d; <strong>Julian Cidraque<\/strong>, head of Quesos La Pardina and academic at the Aragonesa de Gastronom\u00eda; <strong>Lorenzo Rio<\/strong>, journalist and broadcaster for Arag\u00f3n Radio and <strong>Javier Men\u00e9<\/strong>, Javier Men\u00e9, responsible for Fruits and Vegetables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">They valued the <strong>flavor, texture and cooking point<\/strong> of the dough; in the finished croquette, its <strong>presentation<\/strong>, texture, cooking point and flavor; the <strong>harmony in pairing<\/strong> good with beers <strong>Amber<\/strong> or with wines from <strong>Aragonese Wineries<\/strong>, if it had one, and finally, the defense and explanations of each croquette by its creators, highlighting \u00ab<strong>a high culinary level in the offerings and significant class=\"wp-block-paragraph\">After the presentation and defense of the croquettes before the professional jury and during the vote count, the public was able to verify the quality of the finalist proposals paired with the wines, beers and vermouths of the sponsors and collaborators together with hoteliers, sponsors, journalists and prescribers, in what once again became a great party of the hospitality sector.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Awards ceremony<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Miguel \u00c1ngel Vicente<\/strong>, director of <strong>The Zaragozan Gastronome <\/strong>and host of the event, highlighted the <strong>technique and creativity<\/strong> of the finalist croquettes, stating that \u00ab<strong>Reaching the final
